Overview
SIST EN 60335-2-37:2003/A11:2012 specifies the safety requirements for electrically operated commercial deep fat fryers, including pressurized types, used in professional environments such as restaurants, canteens, hospitals, bakeries, and butcheries. This standard is not intended for household appliances. It applies to fryers with rated voltages up to 250 V for single-phase appliances (between one phase and neutral) and up to 480 V for other appliances. The standard incorporates amendments aligned with relevant European Directives for electrical and machinery safety.
Key Topics
Scope of Application: Focuses exclusively on commercial electric deep fat fryers, not covering machines meant solely for industrial processes or those designed to work in hazardous environments (corrosive or explosive atmospheres).
Safety Requirements: Addresses both electrical and mechanical safety, including requirements for construction, operation, and user maintenance. Specific attention is given to machines with power-driven parts and to those declared for commercial use.
Marking and Instructions: Emphasizes clear safety instructions, the use of standardized symbols, and provision of detailed guidelines for operator training, routine maintenance, and safe operation.
Design and Ergonomics: Ensures that control features, handles, and safety mechanisms are easy to identify and operate, reducing the risk of accidental operation or injury.
Hygiene Standards: Incorporates requirements ensuring the appliance can be cleaned and maintained to high hygiene standards, referencing additional standards such as EN ISO 14159 for machinery hygiene.
Conformity with EU Directives: Aligns with the Low Voltage Directive (2006/95/EC) and the Machinery Directive (2006/42/EC), offering guidance on attaining essential health and safety requirements for commercial food equipment.
Applications
Commercial electric deep fat fryers that conform to this standard are typically used in:
- Professional kitchens: Restaurants, commercial catering kitchens, food courts, and canteens.
- Institutional settings: Hospitals, school cafeterias, and staff canteens where food is prepared at scale.
- Specialist food businesses: Bakeries, butcheries, and other commercial enterprises where deep fat frying is required.
This standard ensures that such appliances meet strict criteria for safe installation, operation, and maintenance. Safety features include mechanisms to prevent accidental operation of moving parts, construction requirements to avoid burn or scald risks, and instructions to ensure proper use of residual-current devices (RCDs) if required by the appliance’s electrical characteristics.
