Overview

SIST EN IEC 60335-2-39:2025/A1:2025 specifies safety requirements for electrically operated commercial multi-purpose cooking pans. These appliances are designed for food processing in commercial environments such as restaurants, canteens, hospitals, bakeries, and butcheries. The standard sets out specifications for pans with rated voltages not exceeding 250 V for single-phase appliances (between phase and neutral) and up to 480 V for other appliances. It also addresses pans with pressurized components and those intended for continuous food production.

This document is an amendment (A1) to the European Standard EN IEC 60335-2-39:2024, reflecting the ongoing commitment to ensure the safety, reliability, and compliance of commercial electric cooking equipment.

Key Topics

  • Scope of Application: Focused specifically on commercial-not household-multi-purpose cooking pans, including those with pressurized parts.
  • Terminology Updates: Definitions such as functional surface (intentionally heated) and adjacent surface (can become hot indirectly) clarify safety requirements.
  • Marking and Instructions: Appliances must be clearly labelled with capacity (in liters) and appropriate safety symbols, particularly where external surfaces may get hot. Instructions must highlight precautions for handling and cleaning, especially when pressurized.
  • Temperature and Surface Safety: The standard identifies maximum acceptable temperature rises for different external surfaces (bare metal, coated metal, glass/ceramic, plastic), and specifies requirements for measurement procedures.
  • Mechanical and Electrical Safety: Covers design requirements to prevent accidental tilting, ensures stability and safe handling of moving parts, and sets minimum standards for screw and connection reliability.
  • Leakage Current and Electric Strength: Specifies maximum permissible leakage current for stationary and portable appliances, ensuring electrical safety during normal operation and in damp climates.
  • Cleaning and Maintenance: Addresses special instructions for moving appliances for cleaning purposes and ensuring secure flexible connections for utilities.
  • Fire Resistance: Imposes minimum thresholds for material resistance to heat and fire.

Applications

Commercial electric multi-purpose cooking pans are widely used in:

  • Professional Kitchens: Restaurants, catering facilities, and canteens
  • Institutional Environments: Hospitals, schools, and correctional facilities
  • Food Production: Bakeries, butcheries, and other commercial food enterprises

The safety requirements detailed in this standard help manufacturers demonstrate compliance, assist purchasers in specifying safe equipment, and guide inspectors in safety verification. Adoption of this standard supports:

  • Accident prevention in commercial kitchens
  • Extended equipment lifespan and reduced liability
  • Regulatory compliance with European and international directives

Related Standards

This amendment should be read in conjunction with:

  • EN IEC 60335-2-39:2024: Base standard for commercial electric multi-purpose cooking pans
  • EN IEC 60335-1: General requirements for the safety of household and similar electrical appliances
  • IEC 60584-1: Specifications for thermocouples (used in temperature measurement)
  • ISO 898-1, ISO 3506-1/2/3/4: Mechanical properties of fasteners (structural integrity requirements)
  • IEC 60695-2-12: Glow-wire flammability tests for fire resistance

By adhering to these references, manufacturers and users can ensure comprehensive coverage of both general and unique safety aspects for commercial cooking appliances.
